A portion of the blend is Chardonnay aged in used oak barrels (35 percent), and the balance is equal parts Pinot Noir and Pinot Meunier. Half of the wine is from the 2017 vintage; the rest is a perpetual reserve that the brothers started in 1998. The flavors focus on red currants and green pear, red apples and wildflower honey.

Brochard "Aujourd'Hui Comme Autrefois", Sancerre, FR, 2019
A sauvignon blanc mainly from the limestone hillsides of Chavignol, the name translates as “today, like olden times” and is a nod to the Brochards' ancestors. Average vine age is 45 years and grapes are harvested entirely by hand. The wine is kept on the fine lees for six to eight months, providing flavors of citrus, fresh herbs, and elderflower. It shows a bit more weight and structure thanks to old vines and limestone soils, with minerals and fruit lingering on the finish.

75% Hondarrabi Beltza (40 to 50 year old vines) and 25% Hondarrabi Zuri grown on clay over granite bedrock. Red grapes are destemmed, crushed, and macerated on the skins for 3 hours before pressing and transfer to stainless steel tank for fermentation. White grapes are picked and pressed separately, and their juice is added to the pink juice (ratio 1 : 3) to ferment together. Lively, effervescent and crushable.
